Guacamole Bacon Mini Cups “All day I dream about Food”

Great app to bring to a party – uses two of the all favorite ingredients – bacon and guac! Recipe “All day I dream about Food”

9 slices of bacon uncured
1 ripe avocado
2 tablespoons chopped onion
2 tablespoons chopped cilantro
2 cloves garlic, minced
1 small jalapeno, seeded and chopped (do half if it is to be less hot)
juice of half a lemon
1/2 teaspoon salt kosher
black pepper 1/2 teaspoon

for mini cups bacon, preheat the oven to 400F. In turn a tray of mini-muffin down and place on a baking sheet with large edge (you need something to catch all the bacon grease dripping to the bottom of the oven. If the muffin pan is too large for fit on the sheet, be sure to put one or two baking sheet on a rack in the oven below).

Spray 12 muffin molds dump on the roof with cooking spray (I suggest coconut oil spray).
Cut 6 slice of bacon in half. Cut the remaining slices bacon 3 in 4 equal portions each.

Place one of the smallest of bacon on top of each dump on the roof of mini muffin cups portions. Take one of the longest portions and wrapped around the sides of the molds, as much as possible overlap between the two pieces. Secure the ends with a toothpick.

Bake about 25 to 30 minutes, or until lightly browned but not too brittle (that contract in excess and be very difficult to remove from the pan).

Let cool 5 minutes, then carefully loosen the cups and let drain on a plate covered with paper towels.

Meanwhile, in medium bowl, mash avocado with a fork. Add onion, cilantro, garlic, jalapeno, lime juice, salt and pepper.

When cups are fresh bacon, guacamole division among them. Garnish with coriander leaves.
